Coconut Macs-another gluten free yummy goodness


Ingredients

  • 4 large egg whites
  • Pinch salt
  • 1/2 cup sugar
  • 1 (8-ounce) package sweetened shredded coconut, lightly toasted

Directions

 Toast coconut in oven at 300 for about 15 to 20 min stirring frequently!!! to get a nice golden brown 
Preheat oven to 350 degrees F. In a mixer fitted with a whip attachment. whip egg whites and salt until they become white and begin to stiffen. Add sugar in 3 parts. Continue to whip until the egg whites are very stiff. Using a rubber spatula fold in toasted coconut.
On parchment lined cookie sheets, drop a teaspoon of the mixture leaving 1 to 2 inches around each cookie. Place into the oven and bake for 10 to 15  minutes. The outside should be golden brown but the insides should still be moist

AWESOME gluten free Sunshine blue lemon mini pie

Fillng
4 eggs
1 cup sugar
1 whole  lemon
1 tsp of Vanilla
6 tablespoons of butter
Leave rind on lemon chop in to quarters in a food processor or blender add lemon, eggs,butter, vanilla and sugar blend for about 5min till nice and creamy

While blending take basket of blueberries 6 or 9 oz sprinkle with sugar let sit for a few minutes.when lemon mixture is done divide  up in to 6 ramekins add blueberries to each dish
 Then make the crust

Crust
2 cups oatmeal
1 cup brown sugar or pure cane sugar
about 5 tablespoon of cold butter mix in food processor till combined
Sprinkle crust mixture on top of each ramekin
Bake for about 40 min till top is brown

So I found this yummy recipes for overnight oatmeal  and I tweaked everything a bit added a teaspoon of flaxseed to each made 3 strawberry banana honey ones, two chocolate cover strawberry bananas, and apple cinnamon raisin, apple cinnamon almond one Can't wait to try them tomorrrow

rosemary garlic infused oil

roasted some garlic in the over heated the oil up a little, added some springs of rosemary to jar with the garlic poured the cooled oil over the top Nice yummy homemade infused oil super easy and super yummy :)

I just melted a few chocolate chips in a double broiler- I constructed out of some boiling water in a pan placed a bowl over the water so it wasn't touching the water but trapping the steam. Once the chocolate was melted I just swirled the strawberries in the chocolate super easy and kids can do it.
BROWNIES
 3/4 cup gluten free flour any kind you can mix and match which I did because I only had a little of each oat flour and my homemade rice flour
1 cup brown  sugar 
6 tablespoons cocoa
1 teaspoon salt
1/2 cup butter
2 eggs I whip the eggs up a bit for fluff before I add
1 teaspoon vanilla extract
you can threw in anything you might want nuts, chocolate chips,mini marshmallows for a rocky road effect
 Bake at  350 for about 20-25 min 
then I topped with cream cheese frosting and of course sprinkles and little Easter toothpick flags.
Made some nighty night tea   
SO much fun So easy

pumpkin spice muffins


  • 3 large eggs
  • 2 tablespoons syrup
  • 1 can (15 ounces) pumpkin purée
  • 1 3/4 oat flour... I grind up oatmeal in the food processor
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 2 teaspoons Jamaican spice
  • 1/2 cup soft butter
1) Preheat the oven to 375°F. Grease a 12-cup muffin pan, or line the pan with papers, and grease the papers.
2) Whisk together the eggs, syrup, and pumpkin purée. Set aside.
3) Whisk together the oat flour, sugar, baking powder, xanthan gum, salt, and Jamaica all spice.
4) Add the soft butter, mixing with an electric mixer until evenly crumbly. The mixture will look like coarse sand.
5) Add the egg mixture a bit at a time, beating well with an electric mixer after each addition. Beat for 1 to 2 minutes, until the mixture is fluffy.
6) Scoop the batter into the prepared pan, mounding the cups full. The batter will rise above the level of each cup; that's fine.
7) Let the muffins rest for 10 minutes.

homemade Gluten Free oatmeal banana peanut butter chocolate chip muffins

Ingredients:

  • 2 cups oat flour
  • ½ cups rolled oats
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • a dash of nutmeg
  • ¼ cup brown sugar
  • 1 cup  milk
  • 1 whole banana, cold
  • ½ chocolate chips
  • 1/4 c peanut butter

Instructions:

Transfer rolled or instant oats to a blender and whiz for a few seconds until flour forms. Carefully spoon out 2 cups of oat flour and transfer to a mixing bowl. Whisk in baking powder, cinnamon, nutmeg and sugar, and set aside. Add  milk,peanut butter and banana to the blender and whiz until well combined. Pour into oat flour mixture, add chocolate chips and stir to combine. It should be rather soupy. Add a handful 1/2 cup rolled oats and stir. If it's still runny, add more oats. The batter should be thick like oatmeal  but not dry. Set batter aside and preheat oven to 375F. Grease a muffin pan and spoon batter into the pan. The batter will thicken and get a little sticky/tacky as it sets. If it's so thick you can't stir it easily, thin it out with a little  milk, but you shouldn't need to. It should be thick like oatmeal or heavy mashed potatoes. Spoon into 12 cups and bake 10-15 minutes, or until firm to the touch and a toothpick inserted comes out clean.

gluten free leftover chicken pasta casserole

Ingredients

  • 12 oz. pasta
  • 2 cups carrots
  • 2 cups frozen or fresh peas
  • 1/4 cup butter
  • 2 tablespoons cornstarch
  • 1 cup milk
  • 1 cup vegetable broth
  • 2 cups any type of cheese
  • 2 teaspoons garlic powder
  • 2 tablespoons  parsley 
  • dash of pepper
  • my leftover chicken
  • 1 cup Italian bread crumbs 


  • Cook pasta according to the package directions.
  • Melt butter in a medium sauce pot. Once the butter is melted add cornstarch. Stir until smooth.
  • Cook over a medium-high flame until the mixture is smooth and bubbly, stirring constantly.
  • Add milk slowly, stirring until well blended. Add broth, cheese, garlic powder, parsley and pepper. Stir over a medium flame, until cheese is melted and the sauce is smooth.
  • Combine cooked pasta, alfredo sauce, and vegetables in a 13 x 9 greased baking dish.
  • Sprinkle with bread crumbs. Bake for 20 minutes or until top is browned.

Homemade pot pie





Drove by KFC so wanting one of their pot pies so I decide to try an d make my own now for the crust I used 1 1/3 cup whole wheat flour 1/2 c butter and 1/4 cold cold cold water blended this up in my processor and placed ti in the fridge while  I made the filling now I did this all from free hand I had some frozen green benas, raw carrots, 1 potato, Jerusalem artichoke, leftover mushroom and onion and frozen chicken my hubby grilled and I frozen. So I cut the carrots potato and artichoke into cubed liked you see in pot pies and placed them in a frying pan with some water and pepper let them cook up a bit as that was cooking I cut up th egreen beans threw them in there then cut up the leftover onion and mushroom cooked it all up a bit not totally cooked up but semi cooked removed them from pan added chicken to cook up removed then made a rue equal parts butter and flour I used 8 tbs of each then I added chicken stock to make a gravy this again done all freehand when that was done. dived dough into two parts I rolled out the dough placed it in a pan cooked the dough for about 20 min on 350 degree added filling then placed second ball of dough rolled out on top and made a slit cooked for about 20 to 25 min you will be able to tell when dough is done Super yummy way healthier

spaghetti sauce day





There a market here Market On the Move aka MOM LOVE it get 60lbs of veggies and some fruit for $10 yep ten dollars, So today I am making spaghetti sauce with the tomatoes peppers,onions,squash. I  added some of the Bountiful Basket co-op herbs basil,rosemary,thyme,garlic and parsley threw some flax seed in there bam tons of spaghetti sauce to can Yummies for our tummies
Sauteed up some garlic and onions for my base while I was flash boiling the tomatoes to get the skins off. Peeled the tomatoes, squeeze them so they are sauce looking, this is  my favorite part. Put the onions and garlic in the pot added the tomatoes, then I sauteed up the squash, peppers, more onion and garlic added some wine to the sauteing veggies let it cook down a bit threw that in the pot, chopped up the herbs threw them in pot, added some salt,pepper and a tab bit of sugar to balance the acidity of the tomatoes tossed in some flax seed too they never know :) wink wink  and  it is cooking as I type. Will can it up in a few. Super yummy, super cheap and super healthy

Gluten free chicken tenders


made homemade rice flour by just grinding up rice recipe in another blog I have up ....anyway rice flour, corn starch, egg beaten, cold very cold water frying is better with cold water like ice cold, white pepper and salt mix all together awesome gluten free tempura most tempura has wheat that you buy in the stores. Coated chicken with corn starch first dredge in rice mixture then fry or bake Super yummy!!! Wish my picture came out better but my kids ate them up so fast :) Best seal of approval for me

polenta pizza crust

Pizza night tried this Awesome polenta pizza crust recipes yummy my gluten boy ended up going to a friends house for steak so we didnt top it till later super yummmy recipe Oh yeah I added rosemary and some spices to the crust


Directions:

    Preheat oven to 450 degrees F.

    Lightly oil a large baking sheet.

    In a large bowl, mix polenta with the cold water.
  4. 4
    Add the boiling water in a slow stream, blending with a whisk.

    Add the eggs and mozzarella and mix well.

    Press mixture evenly onto greased baking sheet or pizza pan.

    Bake a few minutes to set slightly (about 5 minutes), top and bake 5-10 minutes more until lightly browned and crisp.

Hillbilly homemade biscuit

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder (3 teaspoons)
  • 1 teaspoon salt
  • 1/4 to 1/3 cup shortening
  • 2/3 cup milk or buttermilk or yogurt
First get out your big bowl. Put the flour, baking powder and salt into the bowl. Drop in the shortening and use your fingers to casually mix it in with the dry ingredients. Don’t get too serious about it because it is better to under mix at this point than over mix. There should still be a few lumps of shortening, the size of peas, or even a little bigger. Two minutes or less of mixing should do it. Next add the milk. Stir it up into a soft dough. On dry days you may need another spoonful or two of milk. Form the dough into a soft ball. Get a piece of waxed paper and lay it on your counter. Sprinkle the waxed paper with a little bit of flour. Place the dough ball on the flour and knead it exactly 10 times. No more, no less. This activates the gluten in the flour just enough, but not too much. Next flatten out the dough with a rolling pin or your hands so it is about 3/4″ thick. Cut into biscuit shapes with a biscuit cutter, or the rim of a clean cup or can. I use a tomato paste can for small biscuits and a tuna can for large biscuits. Works really well. Lay the biscuits onto a cookie sheet or pizza pan and bake them at 425° for 10 to 15 minutes, depending on their size. Makes about a dozen medium sized biscuits. You can brush them with melted margarine when you take them from the oven if you want them to look pretty when they arrive at the table.
Cheese Biscuits: These are made simply by adding a cup of cheese to the flour after you mix in the shortening, right before adding the milk. Cut into smallish biscuits and cook as directed. They are really good with spaghetti or lasagna
